Recipes that leave the kitchen with little mess are always my favorite. These broccoli cheese mini muffins are a great side to just about anything.
Mix all the ingredients together.
Be sure to stir well.
Put a scoop in each greased mini muffin spot.
Bake, let cool and remove from muffin tins.
Serve warm. 
Broccoli Cheese Mini Muffins
Ingredients
- 2 cups broccoli, chopped
- 1 cup almond meal
- 2 cups cheddar cheese, shredded
- 1 tsp garlic powder
- 1 TBSP fresh parsley, finely chopped
- sea salt and pepper
Instructions
- Preheat oven to 350 and grease mini muffin tin.
- Mix all ingredients together in a bowl and stir well.
- Scoop a spoonful into each mini muffin section. This recipe makes about 16 muffins.
- Bake for 25 minutes. Cool slightly and remove from pan. Serve warm.
