Who doesn’t love tacos and burritos?!?!  Using cauliflower rice means this low carb burrito bowl is a healthier option and it’s still delicious.  Cooking the bacon ahead of time makes this recipe even faster to prepare.

Cauli Burrito Bowl

Servings 4

Ingredients
  

  • 8 slices bacon, chopped
  • 2 tbsp coconut oil
  • 1/2 Onion, diced
  • 3 garlic cloves, diced
  • 16 ounces riced cauliflower
  • 4 cups shredded lettuce
  • 1 cup Cherry Tomatoes, halved
  • 1 cup salsa
  • 1 Avocado, sliced
  • 1 cup Cheddar Cheese, shredded

Instructions
 

  • Cook bacon in a skillet and set aside when finished cooking.
  • In a large skillet over low to medium heat add coconut oil, onion and garlic until onions are clear. Add cauliflower rice, stir well to mix. Break bacon into small pieces and add to cauliflower mixture, continue cooking until everything is fully cooked and mixed well.
  • Put lettuce into 4 bowls and top with cauliflower mixture then add tomatoes, salsa, avocado and sprinkle cheese on top. Serve and enjoy.
