You don’t need to look any further, this is the perfect dessert recipe to make in the fall. I love when the stores start stocking pumpkin flavored treats and food. Trader Joes has the best selection of pumpkin EVERYTHING! Stock up on a few cans of pumpkin because you are going to want to make this dessert more than once. The cream cheese, pumpkin and gingersnap combine to make one tasty treat!
The bars are made in easy to follow steps and absolutely delicious straight out of the fridge.

Cheesecake Pumpkin Bars
Ingredients
Crust (Bottom Layer)
- 3 cups Gingersnap Crumbs
- 1/3 cup Brown Sugar
- 1 1/2 sticks Unsalted Butter, melted
Cheesecake Filling (Middle Layer)
- 16 oz cream cheese, softened
- 1 1/2 cups sugar
- 4 Eggs
- 1/2 tsp salt
Pumpkin (Top Layer)
- 1 cup Heavy Cream, hot
- 1 cup sugar
- 1 packet Unflavored Gelatin
- 15oz Pumpkin
- 1 1/4 tsp Nutmeg
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat oven to 350. Mix gingersnap crumbs, brown sugar and melted butter until thoroughly combined. Line a 9x13 baking dish with parchment paper. Pour gingersnap mixture over parchment paper and cover with wax paper. Press the mixture into a firm even layer. Remove wax paper.
- Combine cream cheese and sugar, beat until light and fluffy. Beat in eggs and salt until smooth. Carefully layer cream cheese mixture, evenly, on top of gingersnap crust. Bake for 35-40 minutes, until toothpick inserted in center comes out clean. Cool completely.
- Heat heavy cream. Whisk in sugar and unflavored gelatin until smooth. Add pumpkin, nutmeg, vanilla and salt. Continue mixing. Pour pumpkin flavor over cream cheese layer and place in refrigerator to cool. Pumpkin layer must be firm to the touch before removing from refrigerator.
- Remove entire sheet of bars from pan by lifting the parchment paper. Cut into squares and serve.
