This chicken cheese casserole served over cauliflower rice is a quick dinner for busy weeknights.  It’s full of flavor and the entire family will love it.

Chicken Cheese Casserole with Cauliflower Rice

A complete meal, served in one dish with a cauliflower rice base and decicious chicken cheese casserole scooped on top.
Cook Time 25 minutes
Course Main Course, Main Dish


  • 2 chicken breasts (large, boneless skinless) cubed
  • 1 tbsp olive oil
  • 3 garlic cloves, minces
  • salt & pepper
  • 8 oz cream cheese, softened
  • 2-3 cups spinach
  • 1 cup mozzarella cheese, shredded
  • 20 oz cauliflower rice


  • Marinade chicken breasts, olive oil, garlic, and salt & pepper in a closed container for at least 15 minutes.
  • Preheat oven to 400
  • Place chicken into lidded baking dish, evenly covering the bottom.
  • Add cream cheese over top of the chicken.
  • Cover cream cheese evenly with all spinach.
  • Sprinkle mozzarella on top
  • Place lid on casserole and bake for 25-30 minutes.
  • While casserole is baking, cook cauliflower rice according to package directions.
  • Serve in a bowl with cauliflower rice covered in the casserole.
