After a busy day it’s always nice to come home to a warm meal cooking in the crockpot. This White Bean Chicken Chili is an easy recipe and you are sure to have leftovers to enjoy after your initial meal.

Sauté the onions and garlic in olive oil until onions are tender.

Add onions, most of the ingredients and spices to the crockpot and cook on low for 3-4 hours.

Serve with sour cream, jalapeños and crackers.

Chicken White Bean Chili

Ingredients

1 medium onion, diced
4 garlic cloves, diced
1 TBSP olive oil
2 4oz cans green chilies
3 15 oz cans white navy beans
2 12 oz cans canned chicken, drained
28 oz chicken broth
1 TBSP oregano
1 tsp cayenne pepper
salt and pepper
2 cups monterey jack cheese, shredded

Optional

Sour Cream
crackers
jalapeños, diced

Instructions

Saute onions and garlic in olive oil.
Add onions, green chilies, chicken, beans, broth and spices to crockpot. Cook on low for 3-4 hours.
Add cheese and stir 20 minutes before serving.
Optional - Serve with sour cream, crackers and jalapeños.
