I love recipes like this one…easy to make, minimal dishes and full of flavor. This cilantro lime garbanzo salad checks all those boxes.

Combine all the ingredients and mix well.

Add the dressing and toss, refrigerate for a few hours and serve cold. Toss again before serving for maximum flavor.

This salad is great to take to summer BBQ parties, it makes a great side dish for most meals.

Cilantro Lime Garbanzo Salad

Ingredients

2 cans garbanzo beans rinsed and drained
1 cucumber, diced
2 1/2 cups cherry tomatoes, quartered
1 orange pepper, diced
1 onion, diced
1/2 cup fresh cilantro, chopped
2 1/2 cups corn kernels frozen or fresh

Dressing

4 TBSP lime juice
3 garlic cloves, diced
1/2 tsp paprika
salt and pepper

Instructions

In a large bowl combine all ingredients and mix well.
Combine all dressing ingredients, mix well and pour over salad. Toss well and refrigerate. Serve cold.
