The BEST Enchilada Soup recipe is easy to make in a slow cooker – the leftovers are delicious too!
- 1.5 lbs ground turkey
- 1 lb sausage or ground beef
- 1 onion, chopped
- 1 bell pepper (any color), chopped
- 15 oz green chile enchilada sauce
- 4 oz diced green chiles
- 1 tbsp chili powder
- 2 tsp cumin
- 2 tsp oregano
- 32 oz chicken broth
- 10 oz cauliflower rice
- 1-2 cups mozzarella cheese
- optional: hot sauce (to taste)
- Add all ingredients to a slow cooker and cook on low for 6-8 hours. Stir occassionally, make sure to mix thoroughly.
- Serve with cheese and hot sauce (optional) on top.
