Lettuce wraps are perfect for dinner or lunch on a hot summer day. The flavor of these Edamame Quinoa Wraps is easily changed with various flavors of Humus. Red Pepper is our favorite Humus to use but all that we have tried are good. Spread out the butter lettuce on a cutting board and spread humus on top. Be sure to layer the lettuce leaves to help the wrap stay together.
Add the quinoa down the center of the lettuce.
The veggies are added last.
Once everything is on the lettuce fold the bottom up and roll the lettuce forming a wrap. Feel free to cut the wrap in half if desired.
