This one pan meal is delicious and I love that there is little clean up involved with this recipe. The Mexi Bowl is good with suggested toppings or by itself.
Mexican Zucchini Bowl
Ingredients
- 1 lb ground beef
- 4 garlic cloves
- 1 zucchini, diced
- 1 summer squash, diced
- 10 ounces diced tomatoes and green chilies
- 1 tbsp chili powder
- 1 tsp Cumin
- 1 tsp Garlic Powder
- salt and pepper
- Avocado, diced
- Sour Cream
- shredded cheese
- salsa
Instructions
- Brown meat and garlic over medium heat. When meat is fully cooked drain and return to heat.
- Add zucchini, summer squash, diced tomatoes and green chilies and all spices. Mix well. Turn to low, cover and cook for 10-15 minutes, stirring occasionally.
- Serve in bowls and top with avocado, sour cream, shredded cheese and salsa.
