This one pot soup recipe is full of flavor and perfect to serve for lunch or dinner.
Saute onions in olive oil.
Add broccoli and carrots and continue stirring.
Mix butter, flour and half and half, whisk together.
Add all ingredients in pot, stir well and let cook.

One Pot Broccoli Cheese Soup
Ingredients
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 cup carrot, shredded
- 6 cups broccoli, finely chopped
- 1/4 cup melted butter
- 2 cups half and half
- 1/4 cup almond flour
- 14 oz chicken broth
- 1/4 tsp nutmeg
- salt and pepper
- 1 cup cheddar cheese, shredded
Instructions
- In a sauce pan sauté onion in olive oil, add carrots and broccoli and stir while cooking. Once cooked put in bowl and set aside.
- Using the same pot melt butter over medium heat. Add half an half and flour and whisk for 3-4 minutes.
- Add chicken broth and simmer for 15 minutes.
- Add broccoli mixture and spices to pot and cook over low heat for 20-25 minutes.
- Just before serving add cheese and stir well. Serve warm.
