This easy weeknight recipe is a favorite. The assorted vegetables mixed with chicken covered in pesto result in a healthy meal thats quick to make from start to finish. We always enjoy this recipe for Pesto Chicken Kabobs.
It’s not much more than a little vegetable slicing, mixing the chicken and pesto together and arranging everything on the skewers. Yes, it’s really that easy.
You don’t have to dirty the grill, these kabobs are baked in the oven.

Pesto Chicken Kabobs
Ingredients
- 2 Chicken Breasts
- 2 Bell Peppers, chopped any color
- 1 Zucchini Squash, round slices
- 2 Summer Squash, round slices
- 1 TBSP Garlic Powder
- 1 tsp Pepper
- 10 ounces Pesto
- Skewers
Instructions
- Preheat oven to 350
- Cut chicken breasts in large bite sized pieces and toss in bowl with pesto, garlic powder and pepper. Throughly combine, make sure to cover each piece with pesto.
- Alternate chicken and vegetables on skewers. Fill each skewer completely.
- Put foil in a 9 x 12 baking dish and place skewers on foil. Bake for 40 minutes.
