All that tasty fajita flavor without the carbs. Fajita bowls area easy to make and delicious!

Sheet Pan Fajita Bowls
Ingredients
- 1 lb chicken tenders
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 3 garlic cloves, diced
- 1/2 onion, sliced
- 2 tsp chili powder
- 1 tsp Cumin
- salt and pepper
- 1/4 cup olive oil
- 1 Avocado, diced
- salsa
- Sour Cream
- Cheddar Cheese, shredded
Instructions
- Preheat oven to 400. Line a jelly roll pan with foil and set aside.
- Combine chili powder, cumin, salt and pepper. Set aside.
- Toss chicken and vegetables in a bowl and evenly cover with olive oil. Top with spice mixture. Mix to cover all pieces of chicken and vegetables.
- Spread out vegetables and chicken on foil lined pan and bake for 24-26 minutes.
- Serve in a bowl and top with avocado, salsa, sour cream and cheese.
