This salad is full of flavor and easy to toss together.

The homemade dressing with greek yogurt and fresh cilantro makes for a healthy option. After tossing all the ingredients in the blender you are left with a creamy dressing that is delicious.

Once the salad and dressing are tossed add a few pieces of avocado on the top and it’s ready to serve.

Southwest Cilantro Salad

Servings 4

Ingredients

Dressing

1/2 Cup Plain Greek Yogurt
1/3 Cup olive oil
1 tsp Balsamic Vinegar
1/2 Lime (squeezed for juice only)
1 Cup Cilantro, chopped
3 Garlic Cloves, minced
1/4 tsp Chipotle Seasoning
dash Pepper

Salad

1 Head Romaine Lettuce, chopped
1 Bell Pepper, chopped red, orange or yellow
2 Cups Cherry Tomatoes, cut in half
3 Cups Corn (frozen)
1 15oz. Can Black Beans rinsed and drained
3 Green Onions, diced
1 Avocado, diced

Instructions

Dressing

Add all ingredients to a blender and puree.

Salad

Add all ingredients except avocado to a large bowl and mix.
Pour dressing over salad mixture and toss to combine.
Plate, add avocado pieces to the top of each salad plate and serve.
