This recipe is a perfect meal to have all year round. It’s not difficult to make but satisfies the craving for tasty comfort food.
If you are not familiar with spaghetti squash this is an easy recipe to try for your first time cooking with one.

Spaghetti Squash Alfredo & Turkey Meatballs
Ingredients
- 1 large spaghetti squash
- 12 turkey meatballs (frozen)
- 1 TBSP olive oil
- 3 garlic cloves, diced
- 4 TBSP cream cheese
- 1.5 cups almond milk
- .5 tsp nutmeg
- salt and pepper
- 1 cup parmesan cheese, shredded
- .5 cups fresh parsley, chopped
- 2 tsp fresh basil, chopped
Instructions
- Preheat oven to 350
- Cut squash in half lengthwise. Scoop out seeds and throw away. Place with cut side up on a jelly roll pan. Bake for 45 minutes. Let sit for at least 5 minutes after removing from oven and then use a fork to remove "noodles" from squash.
- Cook meatballs according to package directions.
- In a medium-large sauce pan heat olive oil and garlic over low-medium heat.
- Add cream cheese, stir continuously until melted then slowly add milk. Continue to stir to mix together and add nutmeg, salt and pepper. Reduce heat to simmer.
- Add 1 cup of parmesan cheese, stir well. Turn off heat and add spaghetti squash "noodles". Stir will to thoroughly coat all of the squash.
- Plate and top with meatballs, parsley and basil.
