Salads have been one of my favorite foods for as long as I can remember. When I first began eating keto I realized I wasn’t eating very many salads anymore so I created this one and incorporated it into one of the dinners on the weeks 5 & 6 of the keto meal plan.
It’s easy to make and has lots of flavor. I’m sure you will enjoy it for dinner or lunch.
Spinach Cobb Salad
Ingredients
- 8 cups spinach
- 1 cup grape tomatoes, quartered
- 1/2 cup red onion, diced
- 1/2 cucumber, chopped
- 2 avocados, diced
- 3 eggs, hard boiled and diced
- 6 bacon slices, cooked and diced
- 1/2 cup walnuts, chopped
- pepper
- ranch dressing
Instructions
- In a large salad bowl toss spinach, tomatoes, onion and cucumber.
- Separate into 4 bowls and spread avocados, eggs, bacon and walnuts evenly on top.
- Top with dressing and a little pepper on each one.
