Who doesn’t love an easy dinner thats full of flavor and nutrition. The turkey vegetable one dish recipe is all that and has minimal clean up…that might be my favorite part!

First you cook the turkey and then add the garlic, onions and spices.

Vegetables are added and need a little time to cook.

Finally you will melt the cheese over the top and serve. Yum!

Turkey & Vegetable One Pot Meal

Ingredients

2 TBSP coconut oil
1 lb ground turkey
1/2 Onion, diced
4 garlic cloves, diced
1 tsp basil
1 tsp oregano
dash chili powder
Sea Salt and Pepper
1 Summer Squash, sliced in half rounds
1 Bell Pepper (any color), diced
1 cup cherry tomatoes, quartered
1 cup mozzarella cheese, shredded

Instructions

Heat oil in large skillet on medium heat. Add turkey, breaking into small pieces. Cook throughly and drain liquid.
Add garlic, onion and all spices, stir 3-5 mins and then add remaining vegetables. Stir.
Continue to cook with lid on for 5 - 10 minutes, stirring occasionally.
Turn to low heat and add cheese. Cover and let cheese melt over turkey and vegetables. Remove from heat once cheese is melted.
Serve warm.
