This ground turkey enchilada recipe is a favorite in my house. It’s easy to make and can be frozen for future meals if you like to make recipes ahead of time.

The cheese and turkey melt together to make a delicious flavor.

Once the enchiladas are made just cover in sauce and cheese and bake.

You are sure to enjoy these tasty enchiladas. You can always top with sour cream, avocado or even jalapeños. I love serving my Corn and Black Bean Salad as a side dish to this meal.

Easy Turkey Enchiladas

Ingredients

1 lb ground turkey
1 TBSP chili powder
2 tsp Garlic Powder
dash Salt & Pepper
1 Mild Green Chilies
8 medium Tortillas
2 14oz Enchilada Sauce
1 10oz Colby Jack Cheese
1 Cup Cheddar Cheese, shredded

Optional - Serve on Top

Sour Cream
Avocado, sliced

Instructions

Preheat oven to 375
Cook turkey and spices in skillet over medium heat.
Add green chilies and stir.
Cut Colby Jack Cheese into 16 slices and set aside.
Lightly cover a casserole dish with enchilada sauce and pour remaining sauce in a bowl large enough to dip each tortilla in.
Dip each tortilla in sauce and place meat mixture down center of tortilla. Put two slices of cheese with meat mixture and tightly roll. Place in casserole dish and continue until all 8 tortillas are used up.
Pour remaining enchilada sauce from bowl over the enchiladas and top with cheese.
Bake for 20 minutes.
Optional - Serve with Sour Cream and Avocado
